Stuffed Whole Chicken

Stuffed Whole Chicken Ingredients: 1 Whole Chicken (5.180 pounds) or (2350 g) 3 tbsp (45 ml) vegetable or canola oil 1 tbsp salt 1/2 tsp each: cinnamon, black pepper, cumin, seven spices and paprika 2 tbsp (28 g) melted butter 2 large carrots (250 g) 5 medium potatoes (750 g to 1 kilo) 2 tbsp extra virgin olive oil 1/3 cup (80 ml) freshly squeezed lemon juice 1 cup (240 ml) chicken stock 4 cloves minced garlic + 1/4 tsp salt) 1 tsp paprika 1 tsp basil 1 tsp salt 1/4 tsp black pepper 2 tbsp for brushing the chicken during broiling


Chicken stuffing :

Ingredients: 2 tbsp (30 ml) ghee or oil 400 g (12 oz) minced meat (beef) 1/2 tsp salt 1/2 tsp cinnamon 1/2 tsp black pepper 2 cups (360 g) American long grain rice 3 cups (720 g) chicken stock 1 chicken bouillon cube 1 tsp cinnamon 1/2 nutmeg, grated 1/3 cup (50 g) pine nuts 1/3 cup (45 g) slivered almond 3 tbsp (45 ml) ghee or oil for frying the nuts
